A deeply flavored New Brunswick gingerbread made with a full cup of maple syrup and sour cream instead of the usual molasses — rich, moist, and fragrant with ginger.

Ingredients

  • 1 cup maple syrup
  • 1 cup sour cream
  • 1 egg
  • 2½ cups flour
  • 1¾ teaspoons soda
  • 2 teaspoons ginger
  • ½ teaspoon salt
  • 4 tablespoons melted butter

Instructions

  1. Mix the maple syrup, sour cream, and well-beaten egg together.
  2. Sift all dry ingredients together and stir into the liquid. Beat well.
  3. Add the melted butter and beat again.
  4. Pour into a well-buttered oblong baking pan and bake in a moderate oven (350°F) for about half an hour.
