Maple Syrup Gingerbread
Aida Boyer McAnn — The New Brunswick Cook Book (1938)A deeply flavored New Brunswick gingerbread made with a full cup of maple syrup and sour cream instead of the usual molasses — rich, moist, and fragrant with ginger.
Ingredients
- 1 cup maple syrup
- 1 cup sour cream
- 1 egg
- 2½ cups flour
- 1¾ teaspoons soda
- 2 teaspoons ginger
- ½ teaspoon salt
- 4 tablespoons melted butter
Instructions
- Mix the maple syrup, sour cream, and well-beaten egg together.
- Sift all dry ingredients together and stir into the liquid. Beat well.
- Add the melted butter and beat again.
- Pour into a well-buttered oblong baking pan and bake in a moderate oven (350°F) for about half an hour.
