A rich, old-fashioned New Brunswick pie filled with a thick maple syrup and flour custard studded with chopped nuts — baked in a lower crust and finished with a cloud of whipped cream.

Ingredients

  • 1 cup maple syrup
  • 1 cup water
  • ¾ cup flour
  • ½ cup chopped nuts
  • Pastry for lower pie crust
  • Whipped cream to serve

Instructions

  1. Put the maple syrup and water in a double boiler and bring to a boil.
  2. Mix the flour with a little water to a smooth paste and add to the boiling syrup, beating with an egg beater to remove all lumps.
  3. Stir until the mixture is thick. Add the chopped nuts.
  4. Fill a lower pie crust with the mixture and bake.
  5. Cover the top of the pie with whipped cream before serving.
