Maple Syrup and Nut Pie
Aida Boyer McAnn — The New Brunswick Cook Book (1938)A rich, old-fashioned New Brunswick pie filled with a thick maple syrup and flour custard studded with chopped nuts — baked in a lower crust and finished with a cloud of whipped cream.
Ingredients
- 1 cup maple syrup
- 1 cup water
- ¾ cup flour
- ½ cup chopped nuts
- Pastry for lower pie crust
- Whipped cream to serve
Instructions
- Put the maple syrup and water in a double boiler and bring to a boil.
- Mix the flour with a little water to a smooth paste and add to the boiling syrup, beating with an egg beater to remove all lumps.
- Stir until the mixture is thick. Add the chopped nuts.
- Fill a lower pie crust with the mixture and bake.
- Cover the top of the pie with whipped cream before serving.
