Sour Milk Griddle Cakes
Aida Boyer McAnn — The New Brunswick Cook Book (1938)Classic New Brunswick griddle cakes made with sour milk or buttermilk — light, slightly tangy pancakes beaten up quickly and cooked on a greased griddle. The 1938 cookbook notes that the clack of the wooden spoon mixing pancakes was one of the most distinctive sounds of the New Brunswick farmhouse.
Ingredients
- 1½ cups wheat flour
- ¾ teaspoon soda
- ½ teaspoon salt
- 2 tablespoons sugar
- 2 cups sour milk or buttermilk
- 1 egg
- 2 tablespoons melted fat
Instructions
- Mix and sift the flour, salt, sugar, and soda.
- Add the sour milk or buttermilk, then the well-beaten egg. Lastly, stir in the melted fat.
- Beat the mixture thoroughly and bake at once on a hot, greased griddle.
- Use two griddles if possible to speed up cooking.
