Seasoned mashed potato bound with egg, rolled in bread crumbs, and pan-fried until golden on both sides — a delicious way to use up leftover mashed potato, with an optional topping of grated cheese.

Ingredients

  • 2 cups mashed potatoes
  • 1 egg
  • Salt to taste
  • Fine bread crumbs for rolling
  • Small amount of fat for frying
  • Grated cheese for topping (optional)

Instructions

  1. Season the mashed potatoes and add the beaten egg. Mix thoroughly.
  2. Shape into flat, round patties and roll in the bread crumbs.
  3. Melt a small amount of fat in a frying pan. Fry patties first on one side, then turn and brown on the other.
  4. If desired, sprinkle with grated cheese just before serving. Serve hot.
